While the tofu is baking, prepare the sauce: In a medium bowl, combine the soy sauce, rice vinegar, water, granulated sugar, sesame oil, minced garlic, minced ginger, sesame seeds, and red pepper flakes.

Stir the sauce ingredients well until they are fully combined and the sugar has dissolved.

After the initial 30 minutes of baking, carefully remove the tofu from the oven and flip each piece over.

Return the tofu to the oven and bake for an additional 15 minutes to ensure even crispiness.

Once baked, remove the hot tofu from the oven.

Pour the prepared sauce evenly over the hot tofu, ensuring all pieces are coated.

Let the tofu sit in the sauce for 10-15 minutes to allow it to absorb the delicious flavors. This is the marinating step.
