Slice the scrubbed potatoes into approximately 1/2-inch thick rounds. Place each potato round flat on a cutting board and score a cross-hatch pattern about 1/4-inch deep, making sure not to cut all the way through the skin side. Cut each scored round into quarters to create individual "Lego" block-like pieces.

Place the cut potato pieces in a large bowl and cover them completely with ice water. Let them soak for 15 minutes to draw out excess starch. After soaking, drain the potatoes thoroughly and pat them very dry with paper towels.

In a small bowl, combine the melted unsalted butter and Cajun seasoning. Stir well until the seasoning is fully incorporated into the butter.

Preheat your oven to 400°F. Arrange the dried potato pieces in a single layer on a large baking sheet, ensuring they are not overcrowded. Brush generously with the Cajun butter mixture, making sure all surfaces are coated.

Bake the Lego Potato Bites for 30 minutes, or until they are golden brown and crispy on the outside and tender on the inside.

While the potatoes are baking, prepare the Chipotle Ranch Dip. In a mason jar or small mixing bowl, combine the mayonnaise, minced chipotle in adobo sauce, and chopped fresh dill. If using a jar, seal with a lid and shake vigorously until well combined and creamy. If using a bowl, whisk until smooth.

Once baked, remove the Lego Potato Bites from the oven. Immediately garnish with the grated Parmesan cheese and chopped fresh parsley. Serve hot with the homemade Chipotle Ranch Dip on the side for dipping.
