In a bowl, melt the dark chocolate and unsalted butter together until smooth and glossy. You can do this in a microwave in 30-second intervals, stirring in between, or over a double boiler.

Add the caster sugar and brown sugar to the melted chocolate mixture. Whisk vigorously for 2 to 3 minutes until the mixture becomes glossy and slightly lighter in color.

Pipe long strips of batter, approximately 1.5 to 2 cm wide, onto the prepared baking tray. Ensure to leave enough space between the strips as they will spread slightly during baking. If desired, sprinkle a few extra chocolate chips on top of the piped strips.

Bake the brownie fries for 10 to 13 minutes. They should come out of the oven with shiny, crackly tops, set edges, and soft, fudgy centers.

Immediately after removing from the oven, use a bench scraper, offset spatula, or spoon to gently push the sides of each brownie strip inward. Straighten and neaten the edges to form uniform fry shapes. Allow the brownie fries to cool completely on the baking tray before attempting to lift them, as they will be fragile when warm.
