Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble them until just set, breaking them into small pieces. Remove the scrambled eggs from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic, grated ginger, and the white parts of the green onions. Sauté for 1 minute until fragrant.

Add the finely diced carrots to the skillet and cook for 2-3 minutes until slightly tender-crisp.

Add the day-old, chilled cooked rice to the skillet. Break up any clumps with a spatula and stir-fry for 3-5 minutes, allowing the rice to heat through and get slightly crispy.

Stir in the frozen peas and the reserved scrambled eggs. Pour in the soy sauce and sesame oil. Mix well to combine all ingredients and ensure the rice is evenly coated with the sauce.

Season with salt and black pepper to taste. Continue to stir-fry for another 1-2 minutes.
