Remove the giblets from the cavity of the whole chicken. Rinse the chicken thoroughly under cold water and then pat it completely dry with paper towels.

Place the prepared whole chicken into your crockpot. Rub the entire surface of the chicken with the olive oil, ensuring both sides are coated.

In a small bowl, combine the Cajun spice, Italian seasoning, salt, black pepper, garlic powder, cumin, dry mustard, and paprika. Mix well until all spices are evenly distributed.

Generously rub the mixed seasonings all over the chicken, making sure to get some under the skin as well for maximum flavor.

Place the lid securely on the slow cooker. Set the slow cooker to the 'low' setting and cook for 6 hours.

After 6 hours, carefully remove the lid. Insert a meat thermometer into the thickest part of the chicken, ensuring it does not touch bone. The internal temperature should read 165°F (74°C).

Once cooked, carefully remove the chicken from the crockpot. The meat should be tender and easily shreddable, and the crockpot will contain a flavorful chicken broth.
