Rinse 2 cups of short grain rice thoroughly under cold water until the water runs clear. Place the rinsed rice in a medium pot.

Add 2 cups of water and 1 piece of kombu to the pot with the rice. Cover the pot with a tight-fitting lid and place it on the stove over high heat. Once it comes to a boil, reduce the heat to low and simmer for 15 minutes, or until all the water is absorbed.

While the rice is cooking, prepare the seasoning mixture. In a small bowl, combine 4 tablespoons of rice vinegar, 1 1/2 tablespoons of granulated sugar, and 1 teaspoon of salt. Whisk until the sugar and salt are completely dissolved.

Once the rice is cooked, remove the pot from the heat and immediately remove the kombu. Pour the prepared vinegar mixture evenly over the hot rice. Using a spatula, gently fold and cut the seasoning into the rice, being careful not to mash the grains. Set aside to cool slightly.

Prepare the spicy tuna. If using a block of tuna, dice 3/4 pound of tuna into small, uniform cubes. Chop 2 scallions.

In a mixing bowl, combine the diced tuna, chopped scallions, 1 tablespoon of shoyu, 3 tablespoons of Kewpie mayonnaise, 3 tablespoons of sriracha, 1 tablespoon of sesame oil, and 1 tablespoon of chili oil. Mix all the ingredients thoroughly until well combined and the tuna is evenly coated.

To assemble the Spicy Tuna Don, fill individual serving bowls with a generous portion of the seasoned rice.

Arrange slices of cucumber and avocado neatly next to the rice in each bowl.

Spoon a generous amount of the spicy tuna mixture on top of the rice in each bowl. Garnish with additional chopped scallions, if desired.

Serve immediately with nori sheets on the side for wrapping.
