Brew 8 shots of fresh espresso. For best results, brew the espresso and allow it to cool slightly, or even chill it in the refrigerator for a few minutes. This prevents the ice from melting too quickly when combined with the tonic water.
Fill four 12-ounce glasses generously with ice cubes.
Pour 1 cup of chilled tonic water into each of the four glasses over the ice. If using simple syrup, add 1 tablespoon to each glass now and stir gently to combine with the tonic water.
