Add the chopped carrots, drained broad beans (or butter beans), chopped yellow onion, chopped red, green, and yellow bell peppers, chopped scallions, and fresh thyme sprigs to the pot with the oxtail. Place the whole Scotch Bonnet pepper into the pot, being careful not to break it open if you prefer less heat.
