Preheat your oven to 400°F. Line a large baking sheet (or two smaller ones) with parchment paper for easy cleanup. If using multiple flatbreads, you might need to bake them in batches.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it. Add the chopped fresh spinach to the skillet. Cook, stirring occasionally, until the spinach has wilted completely, about 3-5 minutes. Season the spinach mixture with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Remove from heat and set aside.

Place the flatbreads on the prepared baking sheet(s). Lightly brush the edges of each flatbread with a little extra olive oil. This helps them crisp up nicely.

Divide the wilted spinach and garlic mixture evenly among the flatbreads, spreading it almost to the edges. Sprinkle the crumbled feta cheese and shredded mozzarella cheese over the spinach. If desired, sprinkle with red pepper flakes for a touch of heat.

Bake the flatbread pizzas in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the flatbread edges are golden brown and slightly crispy. Keep an eye on them to prevent over-browning.

Carefully remove the flatbread pizzas from the oven. Let them cool for a minute or two before slicing into desired portions. Serve immediately and enjoy!
