In a large mixing bowl, whisk together the 2 eggs, 3 tablespoons of granulated sugar, 1/3 cup of cornstarch, 2 cups of whole milk, and 1/2 teaspoon of vanilla extract until the mixture is fully combined and smooth.

Pour the custard mixture into a medium-sized pot and place it over medium-low heat. Using a sharp knife, cut the custard into desired slices (e.g., four wedge-shaped pieces). In a small bowl, beat the remaining 1 egg for the egg wash. Using a food-safe brush, generously egg wash the top and sides of each custard piece.

Preheat your air fryer to 320°F. Place the egg-washed custard pieces into the air fryer basket or onto the rack. Air fry for 20 minutes, or until the tops are golden brown and slightly crispy.
