If using watermelon rounds, cut the watermelon into slices about 1–1.5 cm thick. Using the rim of your serving glass, press into the watermelon to cut out 2 rounds. Set the watermelon rounds aside. If using watermelon cubes instead, skip this step.

Optional: Add the Tajín or chili-lime seasoning to a small plate. Rub a lime wedge around the rim of each glass, then dip the rim into the seasoning.

Gently press one watermelon round into the bottom of each glass, then lightly muddle to release some juice while keeping some of the watermelon intact. If using watermelon cubes instead, divide them between the glasses and lightly muddle.

Add ice on top of the watermelon layer.

Pour in the chilled pineapple juice.

Top with chilled lemon-lime kombucha or water kefir.

Garnish with fresh mint or basil, a lime wheel, and a small piece of watermelon or pineapple.

Serve immediately while cold and fizzy.
