Bring a pot of water to a boil. Add the two blocks of frozen udon noodles and boil for 1 minute. Drain thoroughly and set aside.

Heat a wok over high heat until smoking. Add 1 tablespoon of oil to the hot wok.

Add the sliced shiitake mushrooms to the wok and stir-fry for 2-3 minutes until lightly browned.

Add another tablespoon of oil to the wok, then add the drained udon noodles.

Stir-fry the noodles and mushrooms together for 1-2 minutes.

Add the oyster sauce, soy sauce, and dark soy sauce to the wok. Stir-fry vigorously to coat the noodles and mushrooms evenly with the sauces.

Add the water and chopped bok choy to the wok. Continue to stir-fry until the bok choy begins to wilt, about 1-2 minutes.

Sprinkle in the chicken powder and white pepper. Stir-fry again to integrate the seasonings.

Add the Shaoxing wine and stir-fry once more to combine all ingredients.

Turn off the heat. Drizzle with sesame oil and toss to combine.

Transfer the Chewy Shanghai Noodles to a serving plate and serve immediately.
