Add the chopped carrots, peeled and roughly chopped fresh ginger, and roughly chopped yellow onion to the bowl of a food processor.
Pour in the soy sauce, rice vinegar, neutral oil, and granulated sugar into the food processor with the vegetables.
Process all ingredients until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the food processor bowl a few times to ensure everything is well blended.

Once blended to your desired consistency, transfer the ginger carrot dressing to an airtight container or jar. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
