In a medium bowl or measuring cup, add the 3 tablespoons of chia seeds to the 1 cup of milk of your choice. Stir well to combine.

Cover the mixture and refrigerate for at least 15-20 minutes to allow the chia seeds to begin gelling. For a much better, thicker texture and softer seeds, it is recommended to chill for a few hours or even overnight.

Once the chia seed mixture has gelled and thickened, transfer it to a blender.

Add the 2 tablespoons of unsweetened cocoa powder and 1 tablespoon of honey to the blender with the chia seed mixture.

Blend the ingredients until the pudding is smooth, thick, and creamy. Scrape down the sides of the blender as needed to ensure everything is incorporated.

Pour the blended chocolate chia pudding into individual dessert glasses or a single serving dish.

Place the dessert glasses in the refrigerator for a minimum of 1 hour to allow the pudding to set completely and chill thoroughly.
