Heat 1 tablespoon of oil in a large pot or Dutch oven over medium-high heat.

Add 500g of ground beef and cook until browned, breaking it up with a spoon.

Drain any excess fat from the pot.

Add the chopped onion, minced garlic, chopped red bell pepper, chopped green bell pepper, and sliced jalapeño to the pot.

Sauté for 5-7 minutes until the vegetables soften.

Stir in the diced tomatoes, drained and rinsed kidney beans, drained and rinsed black beans, and beef broth.

Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using).

Season with salt and pepper to taste.

Bring the mixture to a simmer, then reduce the heat to low.

Cover the pot and cook for at least 30 minutes, or up to 2 hours for a richer flavour. Stir occasionally to prevent sticking.
