Place the peeled and deveined jumbo shrimp in a medium bowl. Season with 1/2 teaspoon of salt and 1/4 teaspoon of white pepper. Toss to coat evenly.

Heat 1 tablespoon of vegetable oil in a large wok or a large, heavy-bottomed skillet over high heat until shimmering.

Add the seasoned shrimp to the hot wok in a single layer. Cook for 1-2 minutes per side, or until they turn pink and are just cooked through. Do not overcrowd the pan; cook in batches if necessary. Remove the cooked shrimp from the wok and set aside.

Add the remaining 2 tablespoons of vegetable oil to the wok. Add the minced shallots and minced garlic. Stir-fry for 30 seconds to 1 minute, until fragrant.

Add the finely diced carrots and frozen peas to the wok. Stir-fry for 1-2 minutes, until the carrots begin to soften slightly.

Add the cold day-old cooked rice to the wok. Use a spatula or a wooden spoon to break up any clumps of rice and mix it thoroughly with the vegetables and aromatics. Continue to stir-fry for 2-3 minutes.

Push the rice mixture to one side of the wok, creating an empty space. Pour the beaten eggs into the empty side. Scramble the eggs, stirring constantly, until they are just set and cooked through.

Once the eggs are scrambled, combine them with the rice mixture, tossing everything together.

Add the soy sauce, oyster sauce, sesame oil, and 1/4 teaspoon of white pepper to the fried rice. Stir-fry vigorously for 1-2 minutes, ensuring all ingredients are well combined and coated with the sauces.

Return the previously cooked shrimp to the wok. Add the chopped green onions.

Stir-fry for another 1 minute to heat through the shrimp and incorporate the green onions. Taste and adjust seasoning if necessary.

Serve the shrimp fried rice immediately and enjoy!
