Add the rolled oats, filtered water, salt, and optional pitted dates to a high-speed blender.

Blend the mixture on high for 30 to 60 seconds, until smooth and creamy. Avoid over-blending, as this can make the milk slimy.

Place a nut milk bag or several layers of cheesecloth over a large bowl. Pour the blended oat mixture into the bag/cheesecloth.

Carefully squeeze the bag/cheesecloth to extract all the liquid, leaving the oat pulp behind. Discard the pulp.

Pour the strained oat milk into an airtight container, such as a glass jar or bottle.

Store the homemade oat milk in the refrigerator for up to 5 days. Shake well before serving.
