Separate the onion slices into individual rings. You will need about 8-12 sturdy rings for this recipe. Discard any very small or broken rings.

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.

Heat a large non-stick griddle or frying pan over medium heat. Add the olive oil and swirl to coat the bottom of the pan.

Once the oil is shimmering, carefully place the onion rings onto the hot surface, ensuring they are not overlapping. Allow them to cook for 1-2 minutes to slightly soften and adhere to the pan.

Pour the egg mixture into the center of each onion ring, filling it about two-thirds full. Cook for 3-4 minutes, or until the edges of the egg begin to set.

Sprinkle shredded mozzarella cheese over the egg in each onion ring. Continue to cook for another 1-2 minutes, or until the cheese begins to melt.

Carefully flip each onion ring egg bite with a spatula. Cook for an additional 3-4 minutes, or until the egg is fully cooked through and both sides are golden brown.

Transfer the cooked onion ring egg bites to a serving plate. Garnish with chopped fresh cilantro and serve immediately.
