Wash and cube the potatoes. In a large bowl, toss the cubed potatoes with 1 to 2 tablespoons of olive oil, salt, pepper, 1 teaspoon of garlic powder, paprika, and 1 teaspoon of dried parsley until evenly coated.

Preheat your air fryer to 400°F (200°C). Place the seasoned potatoes in the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding. Air fry for 18–20 minutes, shaking the basket 2–3 times during cooking, until the potatoes are golden brown and crispy.

While the potatoes are cooking, prepare the steak bites. Cut the strip steaks into 1-inch cubes. In a separate bowl, toss the steak cubes with 1 tablespoon of olive oil, salt, pepper, 1 teaspoon of garlic powder, and 1 tablespoon of steak seasoning until well coated.

Once the potatoes are done, remove them from the air fryer. Place the seasoned steak bites in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 6–8 minutes, shaking the basket halfway through, until cooked to your desired doneness (approximately 7 minutes for medium-rare).

While the steak is cooking, prepare the garlic butter. In a small microwave-safe bowl or saucepan, melt the 4 tablespoons of butter. Stir in the 1 teaspoon of minced garlic and 1 teaspoon of dried parsley.

Once the steak bites are cooked, combine them with the air-fried potatoes in a large serving bowl. Pour the garlic butter over the steak and potatoes, or drizzle it on top. Toss gently to combine. Serve immediately.
