Cut the 500g chicken breast into bite-sized pieces.

Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the chicken pieces and cook until they are browned. Remove the cooked chicken from the pan and set it aside.

Add the chopped 1 onion to the same pan and cook until it softens. Then, add the minced 2 cloves of garlic and cook for 1 minute until fragrant.

Stir in 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper into the pan.

Sprinkle in 1 tablespoon of flour and stir for 1 minute to create a roux.

Pour in 300ml of chicken broth and 200ml of double cream. Bring the mixture to a simmer, stirring constantly, until the sauce thickens to your desired consistency.

Stir in 100g of spinach until it wilts into the sauce.

Return the cooked chicken to the pan. Add 200g of cooked pasta and stir everything together to combine. Serve immediately.
