Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it.

In a food processor or blender, combine the cottage cheese and large eggs. Blend until the mixture is completely smooth and no lumps of cottage cheese remain. This may take 1-2 minutes, scraping down the sides as needed.

Transfer the smooth cottage cheese mixture to a medium bowl. Stir in 1 cup of shredded mozzarella cheese, garlic powder, dried oregano, salt, and black pepper until well combined.

Gently fold in the almond flour until just incorporated. Do not overmix. The dough will be soft.

On the prepared baking sheet, form the dough into a rectangular loaf, approximately 8x4 inches and about 1 1/2 inches thick. You can use your hands or a spatula to shape it.

Using a sharp knife, score the top of the loaf in a grid pattern, making cuts about 1 inch deep to create individual breadstick sections. Do not cut all the way through the bottom.

Brush the top of the scored loaf generously with melted butter.

Bake for 15 to 18 minutes, or until the breadsticks are golden brown on top and the cheese is melted and bubbly. The internal temperature should reach 200-205°F.

Remove from the oven and let cool for a few minutes on the baking sheet before transferring to a serving platter. Garnish with fresh chopped parsley, if desired. Serve warm and pull apart the cheesy breadsticks.
