Cut the unsmoked bacon into bite-sized pieces.

In a bowl, mix the 100g of plain flour, 1 1/2 teaspoons of soy sauce, and 125ml of water. Then, fold in 1 egg, 1/2 clove of grated garlic, and 120g of shredded cabbage until well combined to form the batter.

Heat a pan with a small amount of oil. Sauté the cut bacon pieces until they are cooked and slightly crispy.

Spread the prepared batter evenly on top of the cooked bacon in the pan. Sear this mixture over medium heat until the bacon becomes crispy and the bottom of the okonomiyaki is golden.

Flip the okonomiyaki and continue to cook on the other side until the batter is thoroughly cooked through.

In a separate small bowl, mix all the sauce ingredients: 2 tablespoons of ketchup, 1/2 tablespoon of sugar, 2 teaspoons of soy sauce, and 1 tablespoon of ground roasted sesame seeds.

Plate the cooked okonomiyaki and generously add the prepared sauce and mayonnaise on top.
