In a mixing bowl, combine 50g butter and 50g sugar. Whisk the mixture until it becomes light and fluffy.

Add 50g yogurt and 50ml milk to the bowl.

Pour in 1 teaspoon vinegar.

Add a few drops of red food color and mix all the wet ingredients well until fully combined and uniformly colored. Prefer using a gel food color instead of powdered food colors. Gel colors give better color in less quantities and are much easier to distribute in the batter evenly.

Sieve the dry ingredients directly into the wet mixture: 60g all purpose flour, 1 teaspoon cocoa powder, 1/2 teaspoon baking powder, and 1/4 teaspoon baking soda.

Gently fold the dry ingredients into the wet mixture using a spatula until just combined. Be careful not to overmix the batter.

Prepare the katoris (small bowls) by thoroughly greasing their insides with melted butter or oil. Then, place a circular piece of parchment paper at the bottom of each katori. This helps the cake release easily without tearing.

Pour the prepared cake batter into the greased and lined katoris. Fill your katori only halfway to leave ample room for the cake to expand without overflowing.

Place the filled katoris into the air fryer basket.

Bake in the air fryer at 160°C for 15-18 minutes. Cooking at a slightly lower temperature instead of the standard 180 degrees gives the heat time to penetrate the deep katori to bake the center without scorching the top.

Once the cakes are fully baked, carefully remove them from the air fryer.

While the cakes are still warm, place chocolate callets on top of each cake. The residual heat from the cake will melt the chocolate. Place the chocolate callets after the cake is fully baked. It will melt the chocolate nicely without caramelising the chocolate in the air fryer.

Allow the chocolate to melt and spread naturally over the warm cakes.

Serve and enjoy the warm Red Velvet Butter Cake in a Katori.
