Bring a large pot of salted water to a rolling boil over high heat. Add the linguine and cook according to package directions until al dente. This usually takes about 8-10 minutes.

While the noodles are cooking, prepare the sesame garlic sauce. In a medium bowl, whisk together the soy sauce, toasted sesame oil, rice vinegar, granulated sugar, minced garlic, grated fresh ginger, and red pepper flakes (if using). Mix until the sugar is dissolved and all ingredients are well combined.

Once the noodles are cooked, reserve about 1/4 cup of the pasta cooking water, then drain the remaining water thoroughly. Immediately transfer the hot, drained noodles to the bowl with the prepared sauce.

Toss the noodles with the sauce until they are evenly coated. If the noodles seem too dry or sticky, add a tablespoon or two of the reserved pasta water to help loosen them up. Continue tossing until the sauce is well distributed.

Divide the garlicky sesame noodles among serving bowls. Garnish generously with thinly sliced green onions and toasted sesame seeds. Serve immediately, either warm or at room temperature.
