Heat 1 tablespoon of oil in a pan over medium heat.

Add the finely chopped small onion to the pan and sauté until softened, about 3-5 minutes.

Add the 200–300 g of chicken mince or beef mince to the pan and cook, breaking it up with a spoon, until it is browned, about 5-7 minutes.

Stir in 1 tablespoon of ketchup, 1 teaspoon of cumin powder, 1 teaspoon of cayenne pepper, 1 teaspoon of garlic powder, and salt to taste. Mix well to combine.

Continue to cook the chili mixture for another 3–5 minutes, allowing it to thicken and for the flavors to meld. Set the chili mixture aside.

In a separate saucepan, melt 2 tablespoons of butter over medium heat.

Add 2 tablespoons of flour to the melted butter and cook for 1 minute, stirring constantly, to create a roux.

Slowly whisk in 1 cup of milk into the roux until the mixture is smooth and lump-free.

Continue to cook the sauce, stirring occasionally, until it is slightly thickened, about 3-5 minutes.

Reduce the heat to low. Add 2-3 American cheese slices and 1/2 cup of shredded mozzarella cheese to the sauce.

Stir continuously until both cheeses are completely melted and the sauce is smooth and creamy.

Season the cheese sauce with 1/2 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of black pepper, and salt to taste. Stir to combine.

To assemble, place a generous portion of hot fries on a serving plate.

Spoon the prepared chili mixture generously over the hot fries.

Pour the warm cheese sauce generously over the chili and fries.

Finish by topping with sliced jalapeños, as desired, and serve immediately.
