Preheat your oven to 375°F (190°C). Line a large sheet pan with aluminum foil and spray lightly with cooking spray.

In a large mixing bowl, combine the melted butter, olive oil, fresh lemon juice, and the dry zesty Italian salad dressing mix. Whisk thoroughly until all ingredients are well combined.

Add the quartered baby yellow potatoes and the trimmed whole green beans to the bowl with the marinade. Toss by hand or with tongs until the vegetables are thoroughly coated.

Spread the coated potatoes and green beans in an even layer on one side of the prepared sheet pan, leaving the other side open for the chicken.

Place the full-sized chicken breasts on the empty side of the sheet pan. If not already marinated, drizzle the chicken breasts with a little Italian dressing. Optionally, sprinkle additional Italian seasoning over the chicken.
