Cut the 2 boneless chicken breasts into 1-inch cubes. Place the cubed chicken in a medium bowl.

Bring the mixture to a simmer, then reduce the heat to low, cover the pan with a lid, and cook for 12-15 minutes, or until the orzo is cooked through and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Remove the lid. Return the cooked chicken to the pan. Pour in 1/2 cup of heavy cream.

Add 1 1/2 cups of shredded cheddar cheese and 1 tablespoon of butter (if using) to the pan.

Stir the mixture gently until the cheese is completely melted and the sauce is creamy and well combined. Taste and adjust seasonings if necessary.
