In a medium bowl, crack 2 eggs per sandwich (total of 8 eggs for 4 servings). Add 1 tablespoon of heavy cream per 2 eggs (total of 4 tablespoons). Season with a pinch of salt (about 1/8 teaspoon per 2 eggs) and a pinch of freshly ground black pepper (about 1/16 teaspoon per 2 eggs).

Whisk the egg mixture vigorously until it is super frothy and well combined. This incorporates air, making the eggs light and fluffy.

Melt 1 tablespoon of unsalted butter in a non-stick pan over medium-low heat. Ensure the butter coats the entire bottom of the pan.

Pour one portion of the whisked egg mixture (from 2 eggs) into the heated pan. Allow the eggs to sit undisturbed for about 30 seconds, letting the edges just begin to set.

Gently begin to scrape the cooked eggs from the outside in towards the center using a spatula. Continue to cook, folding and stirring gently, until the eggs are mostly set but still soft and creamy. Avoid overcooking.

Place 1 slice of cheddar cheese directly on top of the cooking eggs. Cover the pan with a lid and let the eggs and cheese steam for about 30 seconds, or until the cheese is melted and gooey.

While the eggs are cooking, toast the brioche buns to your desired crispness. You can use a toaster, a toaster oven, or lightly pan-fry them.

Carefully transfer the cooked eggs with melted cheese onto the bottom half of a toasted brioche bun.

Sprinkle a small amount of chopped chives (about 1/2 tablespoon) over the eggs.

Place the top half of the brioche bun over the chives to complete the sandwich. Repeat steps 3-9 for the remaining sandwiches. Cut each finished sandwich in half before serving immediately.
