In a large skillet or Dutch oven, brown the ground beef over medium-high heat, breaking it apart with a spoon. Cook until no pink remains, about 5-7 minutes.

Drain any excess grease from the ground beef. Season the beef with salt and black pepper.

Reduce the heat to medium-low. Add the cubed Velveeta cheese and half and half to the skillet with the ground beef. Stir continuously until the Velveeta cheese is completely melted and the sauce is smooth and creamy, about 5-8 minutes.

If using, stir in the can of undrained Rotel. Bring the mixture to a gentle simmer, stirring occasionally.

Add the cooked and drained macaroni noodles to the skillet. Stir well to combine, ensuring all the noodles are coated in the cheesy sauce.
