Prepare the mangoes: Carefully peel the ripe mangoes, remove the pits, and dice the flesh into uniform 1/2-inch pieces. Place the diced mango into a medium-sized mixing bowl.

Prepare the aromatics: Finely dice the 1/2 red onion. For the jalapeño, slice it in half lengthwise, remove the seeds and white membrane (this is where most of the heat resides), then finely mince it. Add the diced red onion and minced jalapeño to the bowl with the mango.
