Preheat your oven to 160°C (325°F).

In a medium bowl, combine the roughly chopped garlic, fresh or dried thyme, flakey salt, cracked pepper, and olive oil. Mix these ingredients well until thoroughly combined.

Rub the prepared mixture all over the lamb shoulder, ensuring all sides are generously coated.

In a large baking pot or Dutch oven, add the roughly cubed onions, water, and chicken stock.

Place the seasoned lamb shoulder on top of the onion and liquid mixture in the baking pot. Scrape any remaining oil mixture from the bowl over the lamb.

Cover the baking pot tightly with a lid or aluminum foil and transfer it to the preheated oven. Cook for 4 hours, or until the lamb is fall-off-the-bone tender.

Once cooked, carefully remove the lamb from the oven. Let it rest for a few minutes before serving. Enjoy the tender lamb with crispy potatoes, your favorite sides, and a generous dollop of chimichurri.
