Warm 1 cup of milk in a microwave-safe bowl for 30 seconds, or until it reaches about 105-115°F (40-46°C).

Add 1 tablespoon of yeast and 1 teaspoon of granulated sugar to the warm milk. Stir the mixture gently and let it sit for 5 minutes until it becomes foamy, indicating the yeast is active.

In a separate large bowl, combine 2 cups of gluten-free all-purpose flour, 1 teaspoon of salt, 1/4 cup of yogurt, and 2 tablespoons of oil.

Pour the activated yeast mixture from Step 2 into the dry ingredients in the large bowl.

Mix everything together with a spoon or your hands until a soft, cohesive dough forms. It may be slightly sticky.

Cover the bowl with a lid or plastic wrap and let the dough rise in a warm place for 1 hour, or until it has visibly increased in size.

Once risen, gently punch down the dough and divide it into 8 equal pieces. Lightly flour your hands if the dough is too sticky.

On a lightly floured surface, roll out each piece of dough into a naan shape (oval or round), about 1/4 inch thick.

Heat a cast iron pan or heavy-bottomed skillet over high heat until very hot.

Cook one naan at a time for 1 to 2 minutes per side, or until it is golden brown, puffed, and has characteristic charred spots. Repeat with the remaining naan.

While each naan is still hot, brush it generously with melted butter and sprinkle with minced garlic and fresh cilantro, as desired.

Serve immediately and enjoy your warm gluten-free naan.
