Line a baking sheet with parchment paper and spread the 1/2 cup walnut halves in a single layer.

In a pan, combine the 1/4 cup granulated sugar, 1/4 cup brown sugar (if using), and 1/4 cup water. Bring the mixture to a boil over medium heat, stirring occasionally.

Add the walnuts to the boiling sugar mixture. Stir continuously until the liquid has completely evaporated and the walnuts are thoroughly coated with the sugar mixture.

Add 2 to 3 tablespoons of butter to the pan with the coated walnuts. Continue to stir until the walnuts are caramelized and appear toasted. Be careful not to burn them.

Transfer the candied walnuts back to the parchment-lined baking sheet and spread them out in a single layer to cool completely. This will take about 15 minutes.

While the walnuts cool, prepare the shrimp. Place the 1 pound of peeled and deveined large shrimp into a mixing bowl. Season with salt and pepper to taste.

Add 1/4 cup cornstarch, 2 teaspoons baking soda, and 1/4 cup flour to the seasoned shrimp. Mix thoroughly until the shrimp are fully coated with the dry mixture.

Pour a generous splash of water into the bowl with the shrimp and dry ingredients, enough to create a wet, thick batter around the shrimp. Mix until the batter is evenly distributed.

Heat neutral oil for frying in a pan over medium-high heat. Ensure there is enough oil for deep or shallow frying, depending on your preference.

Once the oil is hot (around 350-375°F), carefully place the battered shrimp into the pan in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side.

Remove the fried shrimp from the oil and drain excess oil on a wire rack or paper towels.

In a separate bowl, combine 1/4 cup Kewpie mayo, 1 1/2 tablespoons sweetened condensed milk, 1 tablespoon honey, and 1/2 teaspoon lemon juice.

Whisk all the sauce ingredients together until the mixture is smooth and well combined.

Place the freshly fried shrimp into a large mixing bowl. Pour the prepared honey mayo sauce over the shrimp.

Toss the shrimp gently until each piece is completely coated with the sauce.

Add the cooled candied walnuts to the coated shrimp. Toss gently once more to combine the walnuts with the shrimp and sauce.

Serve the Honey Walnut Shrimp immediately, garnished with chopped green onions if desired.
