Preheat your oven to 400°F. Prepare the garlic for roasting by cutting off the very top of the head, exposing the cloves. Place the garlic head on a piece of aluminum foil.

Drizzle the olive oil over the cut garlic head. Wrap the garlic head tightly in the aluminum foil to form a packet.

Place the foil-wrapped garlic in the preheated oven. Roast for 20-25 minutes, or until the garlic is very soft and fragrant.

While the garlic is roasting, grate the mozzarella cheese and chop the fresh parsley. Set aside.

In a medium bowl, combine the softened unsalted butter. Once the roasted garlic is soft, carefully remove it from the foil (it will be hot). Squeeze the soft roasted garlic cloves out of their skins and into the bowl with the softened butter.

Mix the roasted garlic thoroughly with the softened butter until well combined and smooth. You can use a fork or a small spatula for this.

Slice the baguette lengthwise. Spread the garlic-butter mixture generously and evenly onto the cut sides of the bread.

Sprinkle the chopped parsley over the garlic-buttered bread, then top with a generous amount of the grated mozzarella cheese.

Place the prepared bread on a baking sheet. Return to the 400°F oven and bake for 8-10 minutes, or until the cheese is melted, bubbly, and golden brown at the edges.

Remove the garlic bread from the oven, cut into desired portions, and serve immediately.
