In a medium mixing bowl, crack the 2 large eggs. Add the 1/2 cup of milk, 1/4 teaspoon of salt, and 1 tablespoon of granulated sugar.

Whisk the ingredients together thoroughly until they are well combined and slightly frothy. Ensure no streaks of egg yolk or white remain.

Place the 2 slices of sourdough bread into the prepared egg mixture. Gently press the bread down to ensure both sides are fully soaked and absorb the liquid. Allow to soak for 1-2 minutes per side.

Place a large skillet or frying pan over medium heat.

Add 1 tablespoon of butter to the heated pan. Allow the butter to melt and sizzle, coating the bottom of the pan.

Carefully place the soaked sourdough slices into the hot pan. Cook for 3-4 minutes per side, or until each side is golden brown and cooked through. Add the remaining 1 tablespoon of butter to the pan before flipping the second slice, if needed.

Once cooked, remove the eggy bread from the pan and transfer to a cutting board. Cut each slice into quarters.

Serve immediately with your desired optional toppings, such as crispy bacon, a drizzle of maple syrup, a sprinkle of chili flakes, and crumbled feta cheese.
