In a mixing glass, combine the rye whiskey, maple syrup, and Angostura bitters. Stir gently to combine.
Add a large ice cube to each of the four rocks glasses. Pour the rye mixture evenly into the glasses.
For each glass, carefully place the grapefruit peel over the opening and gently twist to express its oils into the drink. Then, place the peel into the glass.
Light a rosemary sprig with a culinary torch or lighter until it begins to smoke. Immediately place the smoking sprig into the rocks glass, cover the glass with a coaster or cloche for about 15-20 seconds to infuse the smoke, then remove the rosemary sprig.
