Preheat oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the bell pepper halves.

In a medium saucepan, bring the chicken broth to a boil. Add the pearl couscous, reduce heat to low, cover, and simmer for 10-12 minutes, or until the liquid is absorbed and couscous is tender. Fluff with a fork.

While the couscous cooks, heat the Greek Extra Virgin Olive Oil (SKU: 081989) in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Add the chopped fresh spinach to the skillet with the cooked turkey. Cook until the spinach wilts, about 2-3 minutes.

In a large bowl, combine the cooked couscous, cooked turkey and spinach mixture, Trader Joe's Harissa Paste, crumbled feta cheese, lemon juice, salt, and black pepper. Mix well to combine all ingredients.

Arrange the bell pepper halves in the prepared baking dish. Spoon the turkey and couscous mixture evenly into each bell pepper half.

Bake for 25-30 minutes, or until the bell peppers are tender and the filling is heated through.

Serve hot and enjoy your gourmet side dish!
