In a mixing bowl, combine the ground pork, 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 teaspoon salt, 1 teaspoon white pepper, 1 teaspoon sugar, 1 tablespoon sesame oil, and 1 tablespoon cornstarch.

Using a spatula or your hands, mix all the ingredients thoroughly until well combined.

Gradually add the 100 ml of water to the pork mixture, mixing continuously. Continue mixing until the pork has absorbed all the liquid and the mixture becomes sticky.

Fold the wrapper diagonally over the filling to form a triangle, pressing firmly along the moistened edges to seal it completely.

Take one of the two bottom corners of the triangle and moisten its tip with water.

Bring the two bottom corners of the triangle together, slightly overlapping them. Press them firmly to seal, creating a 'goldfish' shape.

Repeat this process for all the remaining filling and wrappers. This step should take about 10 minutes for 30+ wontons.

In a heatproof bowl, combine the 1 tablespoon minced garlic, 1 tablespoon sesame seeds, 1 tablespoon chilli flakes, 1 teaspoon sugar, and 1 teaspoon salt.

Heat 100 ml of vegetable or neutral oil in a small saucepan until it is very hot, almost smoking.

Carefully pour the hot oil over the ingredients in the bowl. The mixture should sizzle vigorously.

Add 2 tablespoons soy sauce, 1 tablespoon black vinegar, and 1 teaspoon sesame oil to the bowl.

Stir all the sauce ingredients together until well combined. Set aside.
Bring a large pot of water to a rolling boil.

Carefully add the wrapped wontons to the boiling water. Do not overcrowd the pot; cook in batches if necessary.

Cook the wontons until they float to the surface and are cooked through, typically 2-3 minutes.

Once cooked, drain the wontons using a slotted spoon or colander.

Transfer the cooked wontons to a serving bowl.

Pour the prepared chilli oil sauce generously over the hot wontons.

Garnish with freshly chopped spring onion. Serve immediately and enjoy!
