In a medium saucepan, combine the diced apples, granulated sugar, ground cinnamon, fresh lemon juice, and unsalted butter. Cook over medium heat, stirring occasionally, for 8 to 10 minutes, or until the apples are tender and the liquid has slightly reduced. Remove from heat and let cool completely.

Preheat your oven to 400°F. Line a large baking sheet with parchment paper.

On a lightly floured surface, gently unfold one sheet of thawed puff pastry. Using a 2 to 3-inch star-shaped cookie cutter, cut out as many stars as possible. Repeat with the second sheet of puff pastry. You should have approximately 20-24 stars in total.

In a small bowl, whisk together the large egg and water to create an egg wash.
Place half of the puff pastry stars on the prepared baking sheet. Spoon about 1 teaspoon of the cooled apple filling onto the center of each star. Top each filled star with another puff pastry star. Gently press the edges together to seal, you can use a fork to crimp the edges if desired.

Brush the tops of the assembled star bites with the egg wash.
Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
While the star bites are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. If the glaze is too thick, add a few more drops of milk; if too thin, add a bit more powdered sugar.

Once the star bites are completely cool, drizzle them with the prepared glaze. Serve immediately or store in an airtight container at room temperature.
