Mince the shallot and garlic finely. Set aside.

Reduce the heat to low. Add the shredded cheese directly into the sloppy joe mixture in the pan. Stir continuously until the cheese is fully melted and incorporated, creating a gooey, cheesy sauce.

While the sloppy joe mixture simmers, melt the butter in a separate pan or on a griddle over medium-low heat. Place the split hamburger buns face down in the melted butter and toast until golden brown and slightly crispy, about 1 to 2 minutes per side.

To assemble, spoon a generous amount of the hot, cheesy Rotel Sloppy Joe mixture onto the bottom half of a toasted bun. Place the top bun on top.
