Preheat your oven to 350°F. Lightly grease a 13x9 inch baking dish with cooking spray.

In a large mixing bowl, crack the 8 large eggs and whisk them thoroughly until the yolks and whites are fully combined and slightly frothy.

To the whisked eggs, add the 1 1/2 cups of shredded sharp cheddar cheese, 1/2 cup of shredded Swiss cheese, and 1/2 cup of cottage cheese. Stir to combine.

Stir in 1/2 cup of chopped green onions and 1 teaspoon of seasoned salt. Mix well.

Add the cooked and drained 1 pound of ground breakfast sausage to the egg and cheese mixture. Fold gently to distribute the sausage evenly.

Finally, add the 2 cups of thawed shredded hash browns to the bowl. Mix everything together one last time until all ingredients are well combined.

Pour the entire casserole mixture into the prepared 13x9 inch baking dish. Spread it out into an even layer using a spatula.

Bake the casserole in the preheated oven for 45 to 50 minutes, or until the top is golden brown and the center is set. A knife inserted into the center should come out clean.

Once removed from the oven, garnish the casserole with a few more chopped green onions, if desired. Let it rest for about 5 minutes before cutting into squares and serving.
