Unroll the crescent roll dough and separate it into 8 triangles. If using, prepare the string cheese by cutting each piece in half lengthwise.

Place one half of a string cheese piece on the wide end of each crescent roll triangle. Then, place one hot dog on top of the cheese.

Starting from the wide end, carefully roll up each crescent roll triangle, enclosing the cheese and hot dog, until you reach the narrow tip.
