Preheat oven to 375°F. Lightly grease a 9x13 inch baking dish.

Bring a large pot of salted water to a boil. Add the Trader Joe's radiatore pasta and cook according to package directions until al dente, about 8-10 minutes. Drain well and set aside.

While the pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Trader Joe's sweet Italian sausage (casings removed) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease.

Add the thawed Trader Joe's fire roasted bell peppers and onions to the skillet with the sausage. Cook for 3-5 minutes, stirring occasionally, until slightly softened.

Stir in the Trader Joe's organic marinara sauce, salt, and black pepper. Bring to a simmer and cook for 2-3 minutes to allow flavors to meld.

Remove the skillet from heat. Stir in the cooked radiatore pasta, 1 cup of the shredded mozzarella cheese, and the chopped fresh basil until well combined.

Transfer the pasta mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese and the shredded Trader Joe's Unexpected Cheddar Cheese evenly over the top.

Bake for 20-25 minutes, or until the cheese is melted and bubbly and the bake is heated through. For a golden-brown top, you can broil for the last 1-2 minutes, watching carefully to prevent burning.

Remove from oven and let stand for 5 minutes before serving. Garnish with additional fresh basil, if desired.
