Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the boneless, skinless chicken thighs to the hot pan. Season the chicken with 1 tablespoon of Cajun seasoning, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Cook the chicken for 5-7 minutes, or until it is cooked through and has developed a nice crust. Remove the cooked chicken from the pan and set it aside.

Add 1 1/2 cups of orzo to the same pan. Toast the orzo for 1-2 minutes until it becomes slightly golden, stirring occasionally.

Pour in 4 cups of chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for 10-12 minutes until the orzo is cooked and most of the liquid has been absorbed.

Remove the lid from the pan. Add 1/2 cup of heavy cream, 1/4 cup of grated Parmesan cheese, and the juice of 1 lemon to the orzo. Stir all the ingredients together until well combined.

Add 2 cups of fresh spinach to the pan. Stir until the spinach has wilted into the orzo mixture.

Slice the cooked chicken into desired pieces and add it back to the pan with the orzo. Stir everything together to incorporate the chicken.
