Begin by preparing the mango layer. In a blender, combine the 1 cup of frozen mango with 3/4 cup of boiling water. Blend until the mixture is completely smooth and free of lumps.

In a separate small bowl, sprinkle 3 tablespoons of gelatine over 120 ml of cold water. Stir immediately and thoroughly until the gelatine is fully dissolved. This process is called blooming the gelatine.

Pour the dissolved gelatine mixture into the blender with the mango mixture. Blend again for about 30 seconds to ensure the gelatine is fully incorporated into the mango puree.

Carefully pour the mango mixture into your chosen moulds (silicone moulds work well for gummies) or a container lined with parchment paper. Place the moulds or container in the refrigerator for at least 30 minutes to allow the mango layer to set slightly. It should be firm enough to hold the next layer without mixing.

While the mango layer is setting, prepare the coconut layer. In a small bowl, combine 1 1/2 tablespoons of gelatine with 3 tablespoons of cold water. Stir until the gelatine is completely dissolved.

In a small saucepan, gently heat the 270 ml of coconut milk and 1 tablespoon of maple syrup over low heat. Do not boil. Once warm, remove from heat and whisk in the dissolved gelatine mixture until the coconut mixture is smooth and uniform.

Once the mango layer is slightly set, carefully pour the warm coconut layer over it. Return the moulds or container to the refrigerator and chill for at least 2-3 hours, or until the gummies are completely firm and set. Once set, unmould or cut into desired shapes and enjoy!
