Add the chicken thighs to the bowl with the marinade, ensuring they are fully coated. You can use tongs or your hands to mix them well.

Preheat your air fryer to 400°F. Once preheated, carefully place the marinated chicken thighs in the air fryer basket in a single layer, ensuring not to overcrowd it.

Air fry the chicken for approximately 10-12 minutes, flipping the chicken thighs halfway through the cooking time to ensure even cooking and browning.

While the chicken is cooking, prepare the cucumber mango salad. Dice the cucumber and mango into bite-sized pieces. Thinly slice the green onion. Roughly chop the cilantro. Dice the avocado.

In a separate large bowl, combine the chopped cucumber, mango, green onion, cilantro, and avocado. Add 1 to 2 teaspoons of chili flakes, the juice and zest of 1 lime, and a drizzle of honey. Season with salt and pepper to taste. Gently toss all the salad ingredients until well mixed.

Once the chicken is cooked through and has reached an internal temperature of 165°F, remove it from the air fryer. Divide the cooked peanut lime chicken and the fresh cucumber mango salad between two serving bowls.
