Preheat your oven to 400°F (200°C). Tear four large sheets of heavy-duty aluminum foil. Crimp and fold the edges upward to create sturdy, leak-proof foil boats and place them on a large baking sheet.

Pat the salmon fillets dry with paper towels. Rub each fillet with olive oil, then season generously with smoked paprika, garlic powder, dried oregano, sea salt, black pepper, and fresh thyme.

In a small bowl, whisk together the softened butter, minced garlic, heavy cream, grated Parmesan, lemon juice, and chopped parsley until smooth and creamy.

Spoon half of the creamy garlic mixture into the bottom of each foil boat. Place a seasoned salmon fillet in the center, then spoon the remaining garlic herb cream generously over each piece.

Bake for 12–15 minutes until the salmon is tender and flakes easily with a fork. Switch the oven to high broil for 2–3 minutes to bubble the creamy garlic herb sauce and lightly brown the top.

Scoop warm grains onto each plate alongside roasted zucchini slices and burst cherry tomatoes. Use a fork or spatula to lift a juicy salmon fillet from the foil pack, set it over the grains, and spoon the rich garlic cream sauce pooling in the foil over the entire dish! Garnish with extra fresh parsley if desired.
