Pat the beef shin dry with paper towels. Season generously with salt and pepper.

In a large pan over medium-high heat, sear the edges of the beef shin until browned on all sides. This step is optional but adds depth of flavor.

Transfer the seared beef shin to the slow cooker.

Add the diced onion, roughly chopped carrots, garlic puree, heaped tomato puree, balsamic vinegar, Worcestershire sauce, Guinness, beef stock, and thyme (fresh or dried) to the slow cooker. Season with additional salt and plenty of pepper.

Cover and cook on low for 8 hours. Alternatively, cook on high for 5-6 hours. The beef can be left on low for longer than 8 hours if needed.

Once the cooking time is complete, the meat should be incredibly tender and falling apart. Use a fork to break apart the beef directly in the slow cooker.

Stir in the gravy granules to thicken the pie filling. Mix well until fully incorporated.

Preheat your oven to 200°C. If your slow cooker insert is oven-safe, you can top it directly. Otherwise, transfer the beef filling to an oven-safe pie dish.

Carefully place the light puff pastry over the top of the pie filling, pressing down gently to cover the surface. Trim any excess pastry.

In a small bowl, whisk the egg to create an egg wash. Brush the top of the puff pastry with the egg wash.

Using a knife, poke a few small holes in the top of the pastry to allow steam to escape.

Bake in the preheated oven for approximately 15 minutes, or until the pastry is golden brown and flaky.

Serve the Slow Cooker Guinness Pie hot with mashed potatoes, steamed broccoli, and extra gravy on the side.
