Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a large mixing bowl, combine the 2 eggs, 1/2 cup of Crisco or vegetable shortening, and 2/3 cup of granulated sugar.

Use a hand mixer to beat these ingredients together until the mixture is creamy and light yellow, about 2-3 minutes.

Add 1/2 teaspoon of lemon extract, 1/2 teaspoon of vanilla extract, and 2 fluid ounces of orange juice to the creamy mixture. Mix until just combined.

Next, add 2 cups of all-purpose flour and 1 tablespoon of baking powder to the bowl. Mix the ingredients, initially using a spoon or spatula, then switch to mixing by hand to bring the dough together into a cohesive ball.

Lightly dust a work surface with flour and briefly knead the dough for about 1 minute until smooth.

Take small portions of the dough and roll them into long, thin ropes. Cut these ropes into shorter segments and shape each segment into a small ring or your preferred cookie shape.

Place the shaped cookies onto the prepared baking sheet, leaving a little space between each.

Bake the cookies in the preheated oven for approximately 7 minutes, or until the bottoms are just lightly golden. Do not overbake.

After baking, remove the cookies from the oven and let them cool completely on a wire rack. Once cooled, glaze the cookies and decorate them with sprinkles, as desired.
