Before draining, reserve 1/2 cup of the starchy noodle water. Drain the noodles and rinse them briefly under cold water to prevent sticking, then set aside.

While the noodles are cooking, heat 2 tablespoons of neutral oil in a large skillet or wok over medium heat.

Add the finely minced garlic and 1 tablespoon of chili flakes to the hot oil. Sauté for 1-2 minutes, stirring constantly, until the garlic is fragrant and lightly golden. Be careful not to burn the garlic.

Pour in the soy sauce, granulated sugar, and the reserved 1/2 cup of noodle water. Stir well to combine.

Add the cooked and drained noodles to the skillet with the sauce. Toss continuously for 1-2 minutes, ensuring the noodles are thoroughly coated in the garlic chili sauce.

Divide the noodles among serving bowls. Optionally garnish with additional chili flakes, sesame seeds, and thinly sliced scallions before serving hot.
